In view of dietary fiber (DF), phytochemicals and whole grain foods have the beneficial effects on chronic diseases. There are rapid developments in foreign researches, while little scientific research on Chinese dietary model based on whole grain with long history. According to our previous studies results, we hypothesize: essence of Chinese dietary model based on whole grain is the combination of whole grain and bean which reflect the comprehensive beneficial effects of DF and biologically active substances from whole grain and whole grain-beans complexes. In this study, using the dietary model based on a single whole grain, several whole grain complexes and whole grain-beans complexes to observe the effects of these dietary models on the pathological manifestations of IR to evaluate the health effects of Chinese dietary model based on whole grain on MS. This study through the whole animal and the crowd intervention, observe changes in morphology, histopathology, immunohistochemistry, biochemistry and molecular biology, revealing the effects and related mechanisms of Chinese dietary model based on whole grain. The objects of this study are to accumulate the evidences for health effects of DF and phytochemicals, establish the scientific basis for Chinese whole grain-beans complex package theory, provide new ideas and new experiences for MS prevention, and provide the theoretical and experimental basis for China to improve food structure and development of whole grain nutrition and health food research.
鉴于膳食纤维(DF)植物化学物以及全谷物食品对慢性病的有益作用,国外研究发展迅速,但对我国历史悠久的五谷为养膳食结构模式研究甚少。根据我们前期的工作基础和预实验结果,提出以下假说:我国五谷为养的实质是谷豆复合的膳食结构,体现了全谷物、全谷豆复合物中多种DF及其生物活性物质的综合有益作用:采用我国常用单一全谷物,多种全谷物联合和全谷豆复合等模式,观察对IR病理表现的影响,能够评价我国五谷为养对MR的有益作用,通过整体动物和现场人群干预,观察形态学、组织病理学、免疫组化学、生物化学和分子生物学等指标变化,揭示我国五谷为养结构模式的作用及其机制,为DF和植物化学物研究增加新积累,为我国五谷为养膳食模式及全谷豆复合包膳食理论奠定科学基础,为IR及MS防治提供新思想、新经验,为我国改善膳食结构和全谷物营养健康食品研究和产业发展,提供理论和实践依据。
