Indium Tin Oxide (ITO) electrode is made into the self-assemble sensing element with the hydrophilicity and hydrophobicity, the zein film on the self-assemble sensing element can be formed due to the zein molecules induced by the electric field. The relationship between with zein solution characteristics and electric field strength are investigated, Through the electric field strength to control the self-assembly behavior which the zein molecules form a hydrophilicity/hydrophobicity structure on the electrode surface, the dynamic process of the forming the zein aggregated structure is research by CSLM. The contact angle is research on the theory as a standards which determining hydrophilicity or hydrophobicity of the films. By measuring the contact angle of zein film formed, the relationship between zein solution parameters, the electric field strength and self-assembly hydrophilic/hydrophobic ordered structure of the films is studied, the model is set up to effective control forming the self-assembly hydrophilic/hydrophobic zein aggregate, and the structure, properties and morphology of the zein film formed is analyzed. The research will provide the basic theory for using zein to prepare the high water resistance food preservation film, tissue engineering scaffold, biological sensors and electric spinning nano-fiber.
本研究将导电玻璃(ITO)制成自组装用亲水和疏水性电极传感片,利用电场诱导玉米醇溶蛋白分子在传感片表面自组装形成具有特定分子取向排列的蛋白膜。研究玉米醇溶蛋白溶液特征与电场强度的关系,通过电场强度调控玉米醇溶蛋白在电极表面形成亲水/疏水性凝胶的自组装行为,同时利用激光共聚焦显微镜研究蛋白凝聚态结构形成的动态过程。从理论上研究以膜的接触角作为判定亲水/疏水性的指标,通过测量蛋白凝聚态凝胶干燥后成型膜的接触角,研究膜自组装亲水/疏水有序排列结构与电场强度及蛋白溶液各参数间的关系,建立自组装亲水/疏水性玉米醇溶蛋白凝胶(聚集体)形成的有效调控模型,并表征其结构、形貌和性质。研究为今后应用玉米醇溶蛋白制备具有高耐水性食品保鲜薄膜,制备生物细胞医学组织支架,制备亲/疏水性生物传感器以及电纺生产纳米纤维方面提供基础理论。
