The color is important sensory index of the red wine, and polyphenols are the material basis of wine color. But the relation between the color characteristic with polyphenols was not researched systemically at present. This research are aim at the effect of polyphenols profile on red wine color, targeted the two red varieties wine from the three different growing district of Eastern Foot of Helan Mountain area researching, polyphenols profile and color characteristics are analyzed by the chromatographic methods and so on, in order to seek the main polyphenols contribute to wine color and using mathematic method to set up the relationship between both, and clarifying the response mechanism of color with polyphenols profile .On this basis, the use of mathematical statistics method to set up regression model of young red wine polyphenols profile with color stability ,and forecast the color stability..This research will study systemically the red wine color base material in a certain growing area, reveal the color generation chemical mechanism, this work would improve the theory of wine aging. The forecast the color stability will provide theoretical guidance for the wine quality and process of aging. This research will show the appearance quality and characteristics of red grape from different varieties, It's result will provide scientific basis for variety regionalization, geographical indication production protection , and graded product in Eastern Foot of Helan Mountain area.
颜色是红葡萄酒重要的感官指标,多酚是呈色的物质基础。但有关颜色特征与多酚构成之间的联系目前还缺少系统研究。本研究针对葡萄酒颜色形成的多酚构成基础物质问题,以贺兰山东麓产区不同3个产区、2个品种的红葡萄酒为研究对象,利用色谱等方法分析分析多酚构成和颜色特征,找到影响红葡萄酒颜色的主要多酚,利用数学方法建立两者的相关性,阐明颜色对多酚构成的响应机理。在此基础上,利用数学模拟的方法建立产区红葡萄酒初始多酚构成对颜色稳定性的回归模型,对颜色稳定性进行预测。.本研究就特定产区的红葡萄酒颜色物质基础进行系统研究,揭示呈色的化学机理,有望丰富葡萄酒陈酿理论。红葡萄酒颜色稳定性的预测研究,可为评价葡萄酒的品质、陈酿工艺的制定提供理论指导。此外,本研究展示了产区不同品种红葡萄的外观质量特征和风格,为产区品种区域化、地理标志产品保护、产品分级提供科学依据。
